many people on a health kick today and
we want to do things better but we
really just don't know how we're fearful
but even as my shirt says I want you to
fear less than hope have hope that you
can do it and I'm going to help you do
cook healthy greens that's right healthy
greens with no fat back no smoked turkey
only some spices and some little bit of
pizzazz and you're going to love them
and your friends go too so we're going
to come over here today note that I have
two to three pounds of greens they're
already washed and cut up I have a
jalapeno pepper a medium-sized want to
do a medium onion also but today I have
a large one so I'm only going to use two
thirds of this and you can use 2 medium
size garlic cloves but I have one large
one today that I'm going to use now it's
time to cook you want to take some olive
oil and I've already done this so it
could be hot but you're going to take it
and just pour to cover on medium to
large sauce can the bottom of it and
then you'll do a couple more sports
that's about how much you need then
you'll take the onions you just dump
those in it in that sizzling move them
around so all of them can go into the
oil because you're going to saute these
and you're going to take your jalapeno
and your garlic also and put those in
there then stir around and you're going
to make sure that you cook it until it's
soft you're going to turn your heat on
about medium this is how soft your
onions garlic and jalapeno pepper needs
to be not what I did not tell you is
that you need to make sure to DC you
have a pan your pepper because if not
you'll fight your folks are gonna be on
fire flaming and you don't want that to
happen you want them to be delighted by
your meal not afraid of it alright
so about the add the greens but what I
like to do
put the seasoning first so you have
seasoned salt and pepper that's it a lot
of times people don't think that that's
all you need but that's all you need
because you have the garlic and the
onions and the jalapeno pepper and what
I like to do is take them seasoned salt
and cover the bottom of the pan and just
add a little bit more but the season is
you just do to taste you know how green
is your taste and what you want it to
taste like so I can't even say a quarter
of a teaspoon or anything like that I
just like to shake you know that's how
my bro mama taught me
so as I gotta teach you there shaking
you know what you like it to taste like
all right so we can just kind of stir
that around a little bit and then start
adding your group that's why you don't
need that water like you do the old
summer way with the fat back and you
boil all these enzymes and other
nutrients out of your greens this way
you'll be able to have really healthy
greens now what you may have to do is
what I'm going to have to do right now
is stop and right now because at the top
place the top on and then I hope the
greens to cook down a bit now it's time
to add some more as you can see these
things are cooked down already because
they're not overflowing like they were
before and so I'm going to add some more
actually the restaurant
and at this point I'm going to add a
little bit of more seasoned to and the
reason I do that is when I stir the
greens that have already already in
there I didn't see any seasoning on it
so that means that I didn't have enough
that's how I can tell so just a little
tip for you since I didn't tell you
exact measurements or how much you need
but again seasoned salt and pepper to
taste you want to make sure to stir your
greens and pull the ones that initially
were on the bottom to the top to make
